Eric's Pizza North Norfolk

About

Eric’s Pizza is a place to relax in rustic hygge style.  In winter, chairs are covered with sheepskins and the fire is roaring.  In summer, you can picnic outside too and kids can adventure on the play boat outside. This is no ordinary wood-fired pizza. The mission is to bring the finest ingredients to those that would not normally try them.

The utmost respect for fine Italian food is carried throughout all aspects of the preparation of Eric’s pizza. Dough is made to a traditional recipe, using 00 flour and fermented slowly. The restaurant has introduced an organic, non-pesticide local wheat/pulse blend of flour to slightly elevate the protein levels. This gives the yeast enough food to grow slowly over a longer period of time. Treating the dough with respect, the fermentation process takes 48 hours because it is cooled, or what is known as ‘retarded’, before it is brought slowly back to 21ºC. When it is ready the dough is thrown and artfully hand stretched.

The ingredients for the toppings are carefully selected. For the Margherita, Eric and head pizza chef Fred Bambridge choose Fior di latte, which is translated as flower of milk. It uses the finest quality of milk possible. The Mozzarella is cut into the baton shapes, traditional to this Neapolitan classic

For the Garlic pizza head pizza chef Fred Bambridge, makes a sweet sticky jam of brown sugared shallots cooked with balsamic, harmonising with garlic, herbs and Fior di latte it is garlic bread taken to another level.

For Eric’s Napoli Salmi pizza, they use our own recipe of spiced honey, with authentic Napoli Salami for this classic Italian salami pizza, with a kick. You will also find home-made N’duja, a range of mouth-watering anti-pasti and extremely special sweets.

Innovative specials are regularly on the menu because Fred loves to create. Desserts are particularly exciting and you see regular beauties such as baked egg custard, sweetened ricotta with Norfolk strawberries, and Canele, limoncello curd and Matcha.  Other specials making an appearance include baked vanilla cheesecake, rosemary poached rhubarb, blood orange curd and the beautiful Banana in brown sugar with biscoff spread and crushed biscoff biscuits dessert pizza.

Make room for a dessert special, or just pop in for a sweet and a drink.
